It contains grinded, dried goat milk cheese, sugar, boiled aniseed, orange, olive oil and 13 spices. This traditional Christmas cake of the village is made only in Agiasos in the New Year’s Eve. Its origins can be found in Asia Minor. The pie consists of at least 50 handmade layers of dough which contain pure olive oil, orange and boiled aniseed.
In between them a mixture of grinded goat milk cheese, sugar and 13 spices-such as ginger, cinnamon, clover- is sprinkled. It takes at least 3 hours to prepare and 5 to 8 hours to bake. In the past it used to be consumed throughout the day after Christmas especially during the olive picking period because of its high nutritional value and its ability to be preserved for long periods of time with no need for refrigeration.
